You Have to Try These!

I wanted something sweet the other night so I thought I would try this recipe that I saw Paula Deen make.  It was really easy and very yummy!  Eat them warm with a scoop of ice cream.

Brown Sugar Chewies

Ingredients:

confectioners’ sugar for dusting
1/4   chopped pecans
1/2 teaspoon vanilla extract
1 teaspoon baking powder
3/4 cup all-purpose flour
1   beaten egg
1 cup packed light brown sugar
1/4 cup butter

Directions

Preheat oven to 350 degrees. Spray an 8-inch square pan with vegetable oil cooking spray.

In a small saucepan, melt the butter.  Turn off the heat, add the brown sugar and stir until smooth.  Stir in the egg.  Stir together the flour and baking powder and stir into the brown sugar mixture.  Add the vanilla and pecans.  Pour the batter into the prepared pan and bake for 20 minutes.  When cool, dust the top with a sifting of confectioners’ sugar.

A big flop

I tried unsuccessfully to make Tammy’s Pumpkin Rolls tonight.  I have drooled over the sound of these for so long and was very excited to try them.  Unfortunately they didn’t work for me because my yeast was bad.  I tried dissolving what was left over in water with sugar after the dough wouldn’t rise only to find that the yeast would not bubble or foam.  As soon as I get some more yeast I will try them again.  Hopefully I will be able to let everyone here know how yummy they are soon!

Salsa

So I decided to try to make some salsa with all the tomatoes I had from the garden.  I have never made it before so I was apprehensive.  I just kind of threw everything together and it worked out well.  I think I will try to can some now that I know I can make it.  Here is what I put in it:

Roma tomatoes diced
Black beans
Corn
Fresh Cilantro
Jalapenos
Red Peppers
Red Onion
Fresh lime juice
Salt
Sugar

Lot a’ Maters

Me and Chloe walked down to the garden today and found all these ripe tomatoes!  I need some good recipes to use these up!  Can anyone help me?  I would love to make salsa but I don’t have a recipe for it.  Please share if anyone has a good recipe!  Oh I would also like a recipe for tortilla soup.

A Quick Dinner

Last night I came home and went right down stairs to check out the paint and take some pictures of it for everyone to see.  We really wasted so much time hanging out down there because we still had to make dinner and go pick up a couple more cans of paint.  I went upstairs to cook dinner and my plans were a little thrown off.  My mother-in-law set out some chicken for us to use in the stir-fry I was going to make.  It was all thawed out but still needed cut into strips.  I hate messing with raw chicken so I decided to improvise.  We are trying to eat healthy so throwing it in a pan with gravy on it was out of the question.  Sadly I have not done any real grocery shopping so I had to rummage the cupboards.  I wound up making up a dish that was delicious!  We will be eating this one again.  It was so quick and easy and it was really pretty.  I wish I would have taken a picture of it because it was just so colorful!

Anyway here is what it was:

Place thawed chicken breast in baking dish covered in non stick spray.
Open a can of Rotel and spoon over chicken.
Open a can of black beans and spoon on top of that.
Cover with foil and bake for 30 minutes at 350 (or until chicken is cooked threw).
When finished top with a little shredded cheese (we used salsa jack).
Then drizzle some Hidden Valley Spicy Ranch (one of our new favorites) over the top.

We served this with some corn.  I think it would be just as good with the corn baked on the chicken.  Or what I would have really liked to do is make some sweet corn cakes…but we are trying to eat healthier stuff.  Maybe a nice salad instead! 

Favorite Food

Blake and I decided to try Britni’s yummy looking Pizza Loaf.  It was really easy and we liked it so well we have made it twice.  It was a great Super Bowl food!

In ours we put salami, peperoni, and cheese.  I sprinkled the top with parmesan and Italian seasoning.  Then of course we dipped it in pizza sauce.  Next time I think we will try chicken and broccoli in alfredo sauce!
