Alfredo Sauce

This recipe always makes me smile!  Not because of how yummy it is but because it makes me think of my mom.  This recipe is out of an Italian cookbook that my mom has and is supposed to be the original recipe from Alfredo’s Restaurant in Rome.  My mother though never can follow this recipe.  When I am there I have to help her make it because she refuses to follow it.  We laugh and laugh at her over this.  She adds the ingredients int the pasta all at once.  Please if you make this, don’t follow her lead.  The sauce becomes too chunky and not creamy the way it should.  Sorry mom…I love you anyway!

6 Tbls. butter
1 1/2 cup heavy cream (half in half will also work)
1 cup grated Parmesan cheese
salt and pepper

Melt the butter in a large sauce pan until lightly browned.
Add 1/2 cup of cream and bring to a boil; stirring occasionally.
Reduce heat to medium and add cooked noodles.
Add 1/2 cup of the cheese and 1/2 cup of the cream. 
Toss together and repeat with remaining cheese and cream.
