Lot a’ Maters

Me and Chloe walked down to the garden today and found all these ripe tomatoes!  I need some good recipes to use these up!  Can anyone help me?  I would love to make salsa but I don’t have a recipe for it.  Please share if anyone has a good recipe!  Oh I would also like a recipe for tortilla soup.

  1. that’s a ton of tomatoes! I usually use my tomatoes in a really simple/healthy snack/salad.

    It’s as many tomatoes as you want (2-3 big ones)
    1 cucumber
    1/2 onion
    all chopped/diced
    mix in salt, lemon zest and lemon juice to taste. Let it sit in the fridge for about an hour- enjoy 🙂

  2. They are beautiful! I do the same salad as Sarah all the time but I just use Kraft’s Zesty Italian dressing. It is so good. I have a recipe for taco soup that is a lot like tortilla soup. Do you have it? I’ll find it if you don’t.

  3. Gina, I don’t have a taco soup recipe either. I love the tortilla soup at Cheddars Resturant but haven’t been able to find one on the web. I sure would love to have your taco soup though!

    You know if yall are getting that many tomatoes made be you should stew some and jar them!!! That way you will have some for soups and stews in the winter! Just a thought sister-lou!!!!
